7 Shelf-Life Questions to Answer Before Printing a Best-By Date
Answer seven product, process, packaging, storage, testing, acceptance, and traceability questions before committing inventory and artwork to a date code.A best-by date should follow evidence for the exact commercial product. Printing a competitor’s date or stretching a successful kitchen trial across a new package creates unsupported risk.

- What ends acceptable shelf life? Define microbial safety where relevant and quality limits for flavor, odor, texture, color, separation, rancidity, moisture migration, or package integrity.
- Which formula and process are covered? Record ingredient suppliers, concentrations, pH, water activity, heat or other processing, cooling, fill, and sanitation assumptions.
- Which package is covered? Material, barrier, headspace, closure, seal, light exposure, and fill conditions can change performance.
- Which storage and distribution conditions apply? Include temperature, humidity, refrigeration, freezing, opening, handling, and expected abuse when appropriate.
- What study design supports the date? Define representative batches, samples, intervals, tests, controls, and responsible qualified reviewers before results arrive.
- What are the acceptance criteria? Avoid moving the target after an unfavorable result.
- How will the date connect to lots and changes? Preserve study, formula, process, package, lot, review, and revalidation triggers.
Plan backward from the intended sale
Account for production, quality hold, warehouse time, distributor time, retailer minimum remaining shelf life, and consumer use. A twelve-month technical result does not automatically support a twelve-month date at shipment.
Use the best-by date planner to map study and customer-facing dates. Use the pH and water-activity matrix only as a screening aid for a qualified conversation.
