How to Use Brix to Dilute Syrups, Juice and Beverage Concentrates
Use mass balance to dilute or blend measured concentrates to a target Brix while respecting temperature, calibration, non-sugar solids, process, and safety limitations.Degrees Brix is commonly used as an estimate of soluble solids based on a sucrose reference. In real beverages, acids, salts, alcohol, pulp, and other dissolved material can affect refractometer readings, so Brix is a process measurement—not a complete composition or safety result.
Dilute one concentrate with water
For mass-based planning:
starting mass × starting Brix = final mass × target Brix
Therefore:
final mass = starting mass × starting Brix / target Brix
water to add = final mass - starting mass
Example: 100 kilograms at 60° Brix diluted to a planning target of 12° Brix gives a calculated final mass of 500 kilograms and 400 kilograms of water to add. Mix thoroughly, return the sample to the instrument’s reference conditions, and remeasure. The arithmetic is a target, not a release result.
Blend two liquids
When both streams contain soluble solids, use a two-component mass balance. Record each material’s measured or controlled Brix, mass, temperature, lot, and sampling method. Pearson-square reasoning can give a starting proportion, but a production record should preserve the actual masses and verification reading.
Control the measurement system
Calibrate the refractometer according to its instructions, clean the prism, allow temperature compensation to stabilize, homogenize representative samples, and define how pulp, carbonation, alcohol, or fermentation is handled. Use the same approved method for product release and trend review.
Brix cannot replace pH, water activity, thermal-process validation, microbiological testing, ingredient control, or sensory specifications. Two products at the same Brix can have different formulas and risks.

Keep a correction record
When a batch is outside target, record the initial reading, approved adjustment, calculated amount, actual amount added or removed, re-mixing, final reading, responsible person, and review. Do not hide corrections by overwriting the first value.
